Annual Meatloaf Festival and Cookoff held in historic downtown Paxico.

Red Cap Cattle Co. Meatloaf:
2 lbs. ground beef
1 lb. ground sausage
1 med. onion, diced
1/2 c. Ketchup
2 Tbsp. worcestshire sauce
I sleeve package of Ritz crackers,
crushed (about 32 crackers)
2 cloves crushed garlic, optional
1/2 c. dark brown sugar
1/2 tsp. nutmeg
Mix all meat loaf ingredients and form in a loaf. Mix all sauce ingredients and spoon over
meatloaf. Cover loosely with foil and bake at 350*F for about 1 hour. Remove foil and
continue to bake for another 1/2 hour for a total of
1 1/2 hours baking time.
Note: I often use this same recipe in the slower cooker. The directions are identical. However,
if desired one may quarter potatoes lengthwise and place at the bottom of the slow cooker as
they take longer to cook than meatloaf. Place the meatloaf directly on top of the potatoes,
place carrots around meatloaf, spoon sauce over meatloaf and let slow cook for 6-8 hours.
